Is there a way to associate an image or have a video thumbnail associate with a video post. So that that a widget that shows thumbnails to post will use that video thumbnail or attached image from the custom field.

Take a look at what Chris Wallace has done with the Gallery child theme and the Simple Video Embedder Plugin
The plugin makes video embeds super simple and allows for a thumbnail image url to be stored as a custom field. Then take a look inside the Gallery theme and check out how it's all tied together.

MemberHi em hr. Unfornately the simple video embedder plugin only supports some video sites. I need something with bigger support. Do you know of another way?

From the plugin docs...
However, you can add any embeddable video format by using the Embed Code Override field.
That plugin will support embed codes... What else are you needing?

As far as I know thematic doesn't include action or filter functionality for creating widgets and I'm not aware of a plugin that will do what you are describing.
